Ingredients (2 servings)

🍗 For the BBQ Pulled Chicken:

• 400g boneless, skinless chicken thighs
• 120ml BBQ sauce (sugar-free if preferred)
• 1 tsp smoked paprika
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp salt
• ½ tsp black pepper

🥔 For the Crispy Air-Fried Potatoes:

• 350g baby potatoes (or regular potatoes, diced into chunks)
• 1 tbsp extra virgin olive oil
• 1 tsp smoked paprika
• 1 tsp garlic powder
• 1 tsp salt
• ½ tsp black pepper

🥗 For the Creamy Coleslaw:

• 100g red cabbage, finely shredded
• 1 medium carrot, grated
• 2 spring onions, finely chopped
• 3 tbsp Greek yoghurt (or light mayo)
• 1 tsp apple cider vinegar
• 1 tsp honey (optional)
• ½ tsp salt
• ½ tsp black pepper


Instructions

1. 🥔 Prep Your Ingredients:

Chicken: Trim any excess fat from the chicken thighs.
Potatoes: Wash and cut baby potatoes into bite-sized chunks.
Coleslaw Veggies: Finely shred red cabbage, grate the carrot, and chop the spring onions.

2. 🧂 Season the Chicken & Potatoes:

Chicken: In a bowl, coat chicken thighs with smoked paprika, garlic powder, onion powder, salt, and pepper.
Potatoes: Toss potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.

3. 🍗 Cook Chicken & Potatoes in the Air Fryer:

Chicken Thighs: 180°C (350°F) for 18-20 minutes, flipping halfway.
Potatoes: 200°C (400°F) for 25-30 minutes, shaking halfway.

4. 🥗 Make the Coleslaw (While the Air Fryer Runs):

• In a bowl, mix Greek yoghurt, apple cider vinegar, honey, salt, and pepper.
• Add shredded cabbage mix, tossing until fully coated.
• Set aside to chill while the chicken and potatoes finish cooking.

5. 🔪 Shred the Chicken & Add BBQ Sauce:

• Transfer cooked chicken thighs to a bowl.
• Shred using two forks until finely pulled.
• Mix in BBQ sauce until evenly coated.

6. 🍽️ Assemble the Bowls:

Base: Divide crispy potatoes among 3 bowls.
Protein: Top with BBQ pulled chicken.
Crunch: Add a dollop of creamy coleslaw.
Optional: Garnish with fresh parsley, lime, or pickles for extra flavour.
